Carbon Steel

Our carbon steel ranges have the highest percentage of carbon in the blade and are what all knives used to be made from before stainless steel came along. Carbon steel will oxidise/rust and discolour over time and they need to be dried off immediately after use however they sharpen up beautifully! We have a few different constructions within carbon steel, some are folded steel, some 3-layer laminated etc. If the rust / oxidisation isn’t a problem for you then these traditional knives get a fantastic sharp edge.
