This laminated preparation knife is the traditional vegetable knife in Japan. It is ideal on larger vegetables such as butternut squash. It also perfect for shredding lettuce and cabbage due to its deep rectangular blade.

A beautiful range of knives made by Mr Shungo Ogata. These 3 layered laminated knives have an SG2 steel core with an octagonal red sandalwood handle and red ferrule. This range is named Yūki which means 'courage' and 'bravery' in Japanese to honour my late Father, the founder of Kin Knives. Tony Murland was incredibly brave when he battled his short fight against Motor Neurone Disease.
