The Japanese multi purpose knife. Ideal for a home cooking, the Santoku shape is slightly deeper and shorter than a Gyuto. Santoku means "three virtues" therefore it can be used on meats, fish and vegetables. |

Mr. Hiroo Itou knives barely needs an introduction, his knives are works of art. All Mr. Itou’s knives are completely handmade and unique. Famous for their exquisite and colourful handles, these knives are made with SG2 (R2) powdered steel in the core to ensure not only a sharp but easy to sharpen knife edge (Rockwell hardness HRC 62). These knives are one off pieces and not easy to get hold of, we cannot guarantee a stock at all times.
Mr Itou and Mr Nagata now make these knives together and they will now be known as Mr Itou (Yusui) knives.

This @jamieoliver Rhubarb Crumble is one of my all time favourite desserts (and I don’t normally like hot fruit! 🤣)
Serves 4
FILLING
400g rhubarb
1 vanilla pod or ½ teaspoon vanilla paste
75g golden caster sugar
2 teaspoons cornflour
CRUMBLE
100g cold unsalted butter, plus extra for greasing
150g plain flour
50g golden caster sugar
Preheat the oven to 200ºC/400ºF/gas 6. Grease an ovenproof dish with a little butter.
Combine all filling ingredients.
Tip the crumble mixture over the rhubarb without pressing down. Place on a baking tray to catch any drips, and bake for 35 to 40 minutes, or until golden and bubbling.
Serve with hot vanilla custard or cold cream.
