These beautiful knives are hand crafted by Takamura in his factory in the town of Takefu. For eighty seven years, three generations of the Takamura family, have been making stunning knives. They are constructed to the very highest quality with 32 layers of hot forged Damascus steel. The central cutting core is made of SG-2 (R2) powdered steel, Rockwell Hardness 62 HRC, resulting in a superbly sharp blade. The rivetless handle is made from mixed Pakkawood. These knives are very comfortable for people with larger hands or people who prefer a smooth straight handle. We are privileged to exclusively offer these wonderful knives for the first time in Europe. As you can see although there are no rivets in the handle the knife is constructed with a full tang. This handmade multi-layered preparation knife is the traditional vegetable knife in Japan. It is ideal on larger vegetables such as butternut squash. It also perfect for shredding lettuce and cabbage due to its deep rectangular blade. This knife if often mistaken for a meat cleaver due to its shape however it is still a knife and should be used in the same way.
