These beautiful knives are both designed and made by Mr Hiroaki Masui in Seki City. Hiroaki trained as a designer which is evident when looking at his knives. He originally was in partnership with his brother but established his own business in 1991. Initially he was focusing on producing pocket and hunting knives but in recent years he has made these unique and stunning kitchen knives. These knives with black micarta and turquoise handles are constructed of 100 layers of steel with a cutting core of VG10 in the centre. This medium sized handmade multi-layered preparation knife is the perfect ‘all-rounder’. The Santoku is the Japanese multi-purpose knife and is suitable for vegetables, boneless meats, fish and herbs. It is also great on larger vegetables, for example butternut squash and celeriac due to its deep blade.
