Kin knives should only ever be sharpened on a flat sharpening stone, benchsteel or better still, a sharpening cone. By keeping the knife vertical and wiping it across and down the cone, the angle is automatically correct (see instructions on sharpening). The flat stones all work equally well though we prefer the ceramic stone as it is used dry and does not wear out. Diamond and waterstones need lubricating with water and waterstones will eventually wear.

These small DMT diamond hones are ideally suited to sharpen the smaller knives. Lubricate with water and hold on the edge of a table or block and wipe the edge of the blade across the diamond surface.
