Coriander crusted tuna with carrot and apple salad by Jun Tunaka (Serves 2)
- 200g fresh tuna
- 20g crushed coriander seeds
- 10g Sechzuan pepper
- 10g crushed fennel seeds
- Salad:
- sprig fresh coriander chopped
- 1 carrot
- ¼ daikon
- 1 granny smith apple
- ½ lime juice
- ½ tbsp caster sugar
- 2 tbsp olive oil
- 1 tbsp rice vinegar
- 1 tbsp soya sauce
- Season the tuna with salt and roll in the crushed spices.
- Pour a little olive oil in a pan and seal for 1min on each side.
- Slice into 1cm thick pieces.
- Peel the carrot and daikon, and cut into matchstick sized pieces.
- Do the same with the apple and mix all the ingredients for the salad in a bowl.
- Serve with the sliced tuna.
